GRILLED PALISADE PEACHES + HOMEMADE DAIRY-FREE BLUEBERRY ICE CREAM
I couldn’t be more obsessed with chin-dripping peaches in the summer but my Colorado peeps weren’t kidding about these Palisade peaches being the best around - soo ripe and juicy! Nothing tastes better than eating locally and seasonally!! Take full advantage of peach and grilling season with this amazing summer desert!
🍑 grilled peaches - simply cut the peach lengthwise into 2 halves, remove the pit and lightly coat with coconut oil spray and cinnamon. grill for 4 minutes on medium-high heat. flip and grill for 3-4 minutes to soften and heat through. remove from grill and top with ice cream of choice. i made this dairy-free blueberry ice cream 👇🏼
blueberry ice cream
- 1 peeled and frozen banana
- 1/2 cup frozen wild blueberries
- 1 TBS Trader Joe’s blueberry lavender almond milk (any milk should do)
- 1 pitted medjool date
* first blend the banana and blueberries, adjust as needed. add the milk and the medjool date then blend until creamy.
