SO much to say about this SUPERFOODS salad!! NUTRIENTS. #yolkporn. feelin fancy in under 30 minutes. benefits of beets. honey + red pepper = one of my all time fav combos. eating the π is the best thing you can do for your body.

β purple cauliflower: learned recently that it not only looks pretty but the coloring comes from an additional antioxidant called anthocyanin π air fried at 400F for 20 minutes
β beets: amazing health benefits including high in fiber and high in nitrates that are converted to nitric oxide which improve circulation, blood pressure + endurance [chopped them up raw for a crunch]
β air fried zucchini [you can also roast in the oven at 400F for ~20 minutes, flip halfway]
β kale: massaged with extra virgin olive oil
β shaved Parmesan
β drizzle honey and sprinkle red pepper flakes over the top
