KALE CAESAR & CRISPY CHICKPEA "CROUTONS"

Bringing you a little upgrade on the classic Caesar salad with this kale Caesar, crunchy chickpea “croutons” and a perfectly soft boiled egg!

  • Romaine has a nice crunch to it but can we get a KALE YEAH to the added health benefits that kale brings to the table?! Kale is one of the most nutrient-dense foods being rich in antioxidants, calcium, vitamin A, C and K.

  • Same with croutons - they’re delish in salads but air fried chickpeas still give you nice crunch while also providing some extra protein and fiber for sustained energy!

  • The avocado and the hemp seeds are healthy fats that are particularly rich in omega-3s and help keep you fuller, longer.

Go ahead and give this jam-packed salad a try! It’s a great addition to the salad rotation so you don’t get bored. Plus, you can meal prep a batch of air fried chickpeas to have on hand and make this salad in only a few minutes!

INGREDIENTS:
* chopped kale
* shaved brussels
* avocado
* air fried chickpeas - garlic powder, smoked paprika, cayenne, salt
* shaved parmesan
* hemp hearts
* pasture raised soft boiled egg (or protein of choice)
* Trader Joe’s vegan Caesar dressing

INSTRUCTIONS:
1. massage kale and shaved brussels with EVOO and lemon juice (optional)
2. crunchy chickpeas - rinse and drain 1 can. air fry at 400F for 5 min to dry out. toss in EVOO then cook for 7 more minutes. lastly, coat in garlic powder, cayenne and smoked paprika then air fry for an additional 2 minutes
3. soft boiled egg - bring pot of water to a boil on medium-high heat. once water is boiling, gently add eggs and cook for 7 minutes, maintaining a gentle boil. after 7 min, immediately place eggs into an ice bath to chill for 2 min. crack, peel & enjoy your yolks 🤤
4. top massaged kale/brussels with soft boiled egg, avocado, chickpea croutons, shaved parmesan, hemp hearts, Caesar dressing and salt + pepper
